  • At Red Hawk Brewing our passion for beer is steeped in tradition and history. The brewing of Farmhouse Ales such as Saison, Bière de Garde, and Oud Bruin is typical ales from agrarian regions ranging from French-speaking Wallonia to Flanders, a Dutch Speaking Region and to West Flanders where Flemish is spoken. Dubbels, Tripels and Abbey Ales find their roots in the Monastery Breweries dating back to the Middle Ages, originating in the Cistercian Monastery of La Trappe, France. Since 1664 these beers have been brewed under the Order of Cistercians of the Strict Observance (Ordo Cisterciensis Strictioris Observantiae) a Roman Catholic religious order of cloistered monastics following the Rule of St. Benedict, a branch of the order of Cistercians consisting of Trappists (monks) and Trapistines (nuns).
